We’re a couple who are passionate about fantastic food and drink. Our menu is fresh and local – our lobsters come straight from Newhaven Harbour into our restaurant. We believe in letting the ingredients speak for themselves and showcasing the best produce Scotland has to offer.
We (Chef Stuart Thrumble and Vanessa Milne, front of house) run The Light House together, assisted by Don, Stuart’s right hand man. We’ve been together for 20 years and live in Trinity with our teenage children.
Stuart has been in the kitchen his whole life, from Dalhousie Castle to Skippers under the Corbett family. In recent years to fit around his young family, Stuart has been running the executive kitchens for large corporation firms. He is passionate about ingredients and keeping things fresh and local and loves being back in a restaurant kitchen.
